Quick and Easy Summery Recipe Idea for Dinner


I have a very simple summery dish for you that takes less than 15 minutes to toss together, and no, it’s not a salad. But it is yummersville!

While I primarily eat raw, there are just some veggies that should be cooked for more nutrition, like a tomato. Or a fungus, like a crimini mushroom. I am not a very good recipe follower so I normally think about what I like and then create the recipe around that. Eating a primarily plant-based diet makes this a lot of fun because there is so mucho variety of foods to choose from!

Tonight I am working hard to finish writing my book, 7 Simple Steps to a Crazy Awesome Healthy You!, so I wanted to do something simple yet tasty. And I cheated too – I used canned tomatoes. Oh noooooo! Anyway, the winner for dinner (hey! That rhymes!!) is Zucchini noodles folded into a bed of slightly sautéed onions, garlic and crimini mushrooms with canned (gasp!) tomatoes. Heat degrades the nutrients of most any food, especially the enzymes needed to digest your food, so the less time the food spends in the heat, the better (hear that loud and clear high heat extruded breakfast cereal lovers!). That actually works out pretty well for me because both breakfast is raw and dinner is almost always raw or mostly raw. Real time saver!

Now I know the pictures are not fancy, but I did take them just for you so that you would have something to look at and think how much better the pictures you take of this dish would be. And I would have to agree that yours will probably be better than mine. But the awesome thing here is that you are going to make this healthy dish for yourself and the family. So really we both win. So let’s get to it!

Zucchini Pasta in Zesty Tomato Sauce


1 large organic zucchini sliced (I used a potato peeler because I was too lazy to get out my mandolin)

1 large white onion

6-8 cloves of garlic chopped

1 can stewed tomatoes

1 can tomato paste

1 jalapeno pepper (optional but it does give it quite the zip!)

A bunch of very well washed and chopped crimini mushrooms

Salt and pepper to taste

Pine nuts to sprinkle on top


Peel your zucchini in long strands and set aside. These are your “noodles” or “pasta”. Sauté onions in avocado oil (or butter) for less than a minute on a medium heat, then add garlic and mushrooms and stir around for another 2 minutes. Add salt and pepper to taste.

Mix the tomato paste and stewed tomatoes in a separate bowl with 1 cup of water.   Add this to your onions, garlic and mushrooms and stir for a few minutes until warm. Put your zucchini noodles in a bowl and cover with slightly warm sauce.

And then decorate it with pine nuts, olives, sprinkle to your hearts delight with fresh oregano, basil, thyme, rosemary or whatever strikes your fancy when you make it.


I have no idea how many calories this dish has because I mainly eat whole foods and never count calories. But I can tell you that this is a nutrition packed dinner. You have copper, selenium, phosphorus, zinc, manganese and a lot of B vitamins in the mushrooms, lutein in the tomato sauce (well maybe if it survived the canning process) and the raw organic zucchini blows the roof off nutrition because it is an outstanding source of manganese, vitamin C, vitamin A, magnesium, folate, potassium, copper, and phosphorus. It even has a high content of omega-3 fatty acids (wow!), zinc, niacin, and protein PLUS, vitamin B1, vitamin B6, vitamin B2, and calcium!

Now that’s a powerhouse dinner winner!!
